The tea leaves are rolled into little pellets, or “pearls”, as they’re referred to in China. When you pour hot water over the leaves, they jiggle, wiggle, and pop as they unroll and start releasing their magic. Gunpowder is one of the more flavorful green teas; smooth, smoky, full-bodied, with a dark golden-olive liquor.
